He spent 14 years practising his art in different renowned Maisons, markedly in Paris and New York including Patisserie Roller-Pradier (Paris)- Michelin Star Gastronomic Restaurant Loiseau Rive Gauche (Paris)and more recently, the French Consulate in New York.
Julien tries to recapture childhood emotions by revisiting the classics of French pastry to which he applies his contemporary knowledge to create modern versions of traditional pastries.
His creations demonstrate haute-pastry skills with cleverly injected doses of creativity. They become not only proper eye candy but also a true delicacy to the most sophisticated tastes. Julien is deeply committed to fresh and high quality ingredients. Julien is a true gourmet and artist who loves to discuss his pastries with his customers.
